Spring is just around the corner, and it’s time to start thinking about trying some new recipes for all the eggs that your children will be coloring for Easter. Eggs will be going on sale soon!
There are many easy egg dishes you can prepare, but deviled eggs are definitely an all time favorite. What many people don’t realize, however, is just how many different recipes there are for deviled eggs.
Many people have their “tried and true” way to cook hard boiled eggs, but it really isn’t that hard. All you have to do is place the eggs in a large sauce pan and fill the pan half way with cold water. Heat the water over high heat until the water boils.
After the water boils, remove the pan from the heat and place the lid on the pan. Let the pan sit for about 10 minutes. The eggs will cook as they sit in the hot water.
Run the eggs under cold water until eggs are cool to the touch. Carefully remove the shells from the eggs.
Here are some fun new deviled egg recipes for you to try.
Buffalo Bleu Cheese Deviled Eggs
6 boiled eggs
1/4 c. crumbled bleu cheese
2 tbsp. mayonnaise
1 tbsp. fresh parsley, chopped
3 tsp. Buffalo sauce
Cut boiled eggs in half lengthwise and place yolks in a bowl. Mash yolks, bleu cheese, and mayonnaise together with a potato masher. Stir in chopped parsley and Buffalo sauce.
Spoon yolk mixture into egg halves.
Shrimp Deviled Eggs
6 boiled eggs
1 tbsp. mayonnaise
1 tbsp. pesto
1 c. shrimp, chopped finely
2 tbsp. chopped fresh parsley
12 small cooked shrimp
Cut boiled eggs in half lengthwise and place yolks in a bowl. Mash yolks together with mayonnaise and pesto with a potato masher. Stir in chopped shrimp and parsley. Season with salt and pepper.
Spoon yolk mixture into egg halves and place one small cooked shrimp on top of each egg. Sprinkle with paprika.
Avocado Deviled Eggs
6 boiled eggs
1 small avocado, chopped finely
3 tbsp. mayonnaise
2 tsp. lemon juice
Cut boiled eggs in half lengthwise and place yolks in a bowl. Mash yolks, avocado, and mayonnaise together with a potato masher. Season with garlic powder, cayenne pepper and salt to taste.
Spoon mixture into egg halves. Sprinkle with additional cayenne pepper, if desired.
BLT Deviled Eggs
6 hard boiled eggs
1/3 c. mayonnaise
2 tbsp. Ranch salad dressing
3 slices cooked bacon, crumbled
5 cherry tomatoes, chopped
Cut boiled eggs in half lengthwise and place yolks in a bowl. Mash yolks, mayonnaise, and Ranch dressing together with a potato masher. Stir in crumbled bacon and chopped cherry tomatoes.
Spoon mixture into egg halves and garnish with shredded lettuce.
Colored Deviled Eggs
Colored deviled eggs are really fun to make for Easter, and so easy to make.
You can do this with any deviled egg recipe. After you remove the yolk from the boiled egg, place the egg whites in bowls of water with food coloring added to the water (adding 1 tsp. of vinegar to each bowl will also help the colors set). Let the whites set in the colored water for 20 minutes or so, or until the whites have achieved the desired color.
Prepare the yolks with your favorite deviled egg filling and then place in the colored egg whites.
Quick tip: When you are making deviled eggs you can make them look more attractive by using a pastry bag to put the filling back in the eggs. Make your own pastry bag by placing the filling in a reclosable ziploc bag and snipping off one of the corners of the bag. Gently squeeze the bag to fill the eggs.
Deviled eggs aren’t only for Easter, they make a great appetizer for any get together with family or friends. Whichever recipe you choose, you can’t go wrong. Deviled eggs are always a big hit.
