Birthdays have always been delightful occasions for me and I have always tried and new and interesting recipes for my son’s birthday. Some of them were a big time hit and some others fell flat. But no matter whether the recipes were good or bad my son and husband have always enjoyed whatever I bake. This gives me a strong sense of motivation to make sure that someday I will be able to bake one of the finest cake in the world. Many cake shops flooded with interesting birthday cake design but my son like to have the Choco Chip Muffin that I had baked for him with love and affection.

This year with my son’s birthday just around the corner, I planned to try BDay cakes. He has always loved to have this whenever we are dining outside but this time I was trying to bake one for him. Since he likes choco chips, hence I thought of baking choco chip muffins. But trust me, the cake turned out to be exceptionally well. It was one of those bakes about which my son loves to talk about even till today.

Maida( All-purpose Flour) – 1 and 1/2 cups
Chocolate Chips – 1/2 cup (I used dark choco chips)
Plain yogurt(Curd) – 1 cup
Granulated Sugar – 3/4 cup
Baking soda – 1/2 tsp
Baking powder – 1 and 1/4 tsp
Cooking oil – 1/2 cup
Vanilla essence – 1 and 1/2 tsp

Method:

Firstly, sieve maida twice so that all the unwanted ingredients are removed and keep aside for some time. Cream sugar and curd until sugar completely dissolves and turns out to be a fine batter.

Add baking powder, baking soda to the creamed mixture and mix well and keep it aside for resting.

Leave aside for 5 mins and you can see the bubbles appearing, then it is time to add some flavour to it. Now add vanilla essence, cooking oil and mix well to ensure that the cakes turns out to fresh and soft.

Next slowly add maida in portions at a time, adding all in a single go is surely going to hamper the exquisite taste of the cakes and blend with wet ingredients.

Beat well with a whisk until creamy and thick, this will add fluffiness to the cakes. Add choco chips and give a quick mix.

He often asks me to bake this chocolate muffin sometime for him again. But I thought that I will delight him with something better than this.
